The olive oil route

During the season one can harvest the olives and taste the product for oneself in the Restaurant ‘Casa Gervasio’.

OlivoThe people of the Somontano area , where they cultivate the olive, continue carrying out their work as a craft, the oil being produced in small presses, and they have also conserved the knowledge and the genetic inheritance of their trees, now reckoning on some twenty different varieties, some of which are indigenous to Somontano and even exclusive to certain villages.Olivos

In the district there are also modern industrial complexes with oil presses in which they produce the oil in the old tradition craft way. In this way both the past and the present combine to offer an olive oil of the highest quality, produced from varieties such as ‘Alquezerana’ or ‘Verdeña’ which give colour, bouquet, personality and flavour to our gastronomy.

. In the old oil press, the production process is described by means of the original elements (mill, press…..) scale models and informative panels. A surprising audio-visual display shows the history of olive oil in Somontano, and a series of concepts linked to it and which remain deeply rooted in the people of Somontano.
